Under the cover of night, free-roaming wild civets intuitively select only the sweetest, ripest cherries. Inside their digestive tract, a natural enzymatic fermentation breaks down the cherry's proteins, lowering bitterness.
At dawn, our dedicated rangers patrol the high-altitude forest floor. They carefully hand-collect the dropped beans, ensuring absolute zero interference with the civets' natural habitat or feeding patterns.
Hygiene is paramount. The collected beans undergo a rigorous full-washed process. Using pure mountain spring water, the beans are repeatedly washed to strip away all external organic matter, leaving only the pristine parchment.
The clean parchment coffee is meticulously sun-dried on raised African beds. It is turned regularly to ensure an even drying process until it reaches the optimal export-grade moisture content of 11-12%.
The protective parchment is hulled to reveal the green bean. Our quality control team then performs a strict manual hand-sorting, eliminating any defects to meet the rigorous standards of specialty roasters worldwide.
